At the Human Nutrition Research Center on Aging, we've shown that supplementing elderly people's diet with vitamin E, an antioxidant nutrient, for one month improves their immune responsiveness. In our experiments we've also found that vitamin E appears to play multiple roles in the bodies of the elderly. Folate, another B vitamin, is severely lacking in colitis patients and must be replaced by increasing dietary intake or by supplementing with folic acid.
